How to cook Saltison?
Saltison (salzesson) is a meat dish,spread in the kitchens of Poland, Belarus, Ukraine and Russia. The dish itself and its name are borrowed from Italian cuisine. Saltison according to the classic recipe consists of giblets (liver, heart, kidneys, lungs, fat, diaphragm) or head. Season it with spices - garlic and pepper (you can also add your own to taste) and wrapped in the stomach or intestines. After that, it is baked or cooked, and then pressed, cooled and used cold. Saltison from the pig's head
Preparation of Saltison from the pig's head is notwill take a long time unlike the preparation of meat. If you do not want to use meat from the head in a recipe, you can cook this dish of pork giblets - it will be quicker and easier.
- One pig's head;
- 2 large onions;
- 2 carrots;
- 10 peas of black pepper;
- 4 cloves of garlic;
- 1 tablespoon of salt;
- 1 teaspoon of sugar.
- Peel the carrots and onions. Squeeze the garlic.
- Pork head treat: scrape off the entire skin with a knife, remove the stubble and, if there is, then scorch marks. Cut to pieces the head, take out your eyes, brain and rinse well.
- To prepare the meat for the process, soak the left head in cold water for a couple of hours.
- After two hours, drain the water and fill the pan with the head again, approximately two-thirds, bring to a boil.
- Remove the foam that formed from above. Add carrots, onions, sugar, salt, pepper to make the meat more fragrant, and cook over medium heat for 7 hours.

- Squeeze the garlic and mix it with the meat.
- Lay the meat on gauze (it is desirable to fold it twice) and press it down. Clean in the refrigerator until it freezes.
